Whatever you want. I used a 3/4" birch plywood.
On use, 3/4" is probably too thick. I would try 1/2" or maybe 5/8".

I did this in six 1/8" passes. Did a .1" outside edge until the last run to keep the chipout down. Outside lines. The area under the knees was a bit too rounded, so I put it on the scroll saw to sharpen them up.
